This is some of the best teriyaki chicken you’ll ever taste. It’s sweet, has some delicious flavor from the pineapple, and is an overall delicious but easy dish.
Ingredients
- 1.3 pounds (600 grams) skinless boneless chicken thighs or breasts, cut into 1 ½-inch pieces
- 1 tablespoon cooking oil
- ¼ cup low-sodium soy sauce
- 3 tablespoons light brown sugar ( or white granulated sugar )
- 3 tablespoons rice wine vinegar or apple cider vinegar
- ¼ cup pineapple juice (adds delicious flavor and sweetness)
- 2 tablespoons Mirin (optional — white wine or dry sherry can be substituted )
- 1 tablespoon sesame oil, optional (adds wonderful flavor)
- 2 teaspoons minced garlic ( 2 cloves garlic )
- 1 green onion stem, sliced or sliced parsley to garnish
- 4 cups broccoli florets, lightly steamed
- 2 cups diced pineapple
- 1 teaspoon cornstarch mixed with 2 teaspoons of water (if needed to thicken sauce)
- Steamed rice to serve
Preparation
- Cook chicken
Heat cooking oil in a large pan over medium heat. Stir fry chicken, stirring occasionally until lightly browned and crisp.
- Mix together sauce ingredients
In a small bowl whisk together the soy sauce, sugar, Sake/vinegar, pineapple juice, Mirin and sesame oil to combine. Set aside.
- Cook sauce until thick.
Add the garlic to the center of the pan and saute for about 30 seconds or until slightly fragrant. Pour the sauce in and allow to cook, while continuously stirring, until the sauce thickens into a nice shiny glaze ( about 3-4 minutes ).
- Add in the last few ingredients.
Mix in the steamed broccoli and diced pineapples. Serve over steamed rice and garnish with green onion and parsley to make a beautiful dish of Pineapple Teriyaki Chicken.
Tips
- You can replace the minced garlic for minced ginger or use both if desired.
- If your sauce isn’t thickening on it’s own, mix together the cornstarch/water mixture and stir until it is a syrupy texture and add it in the sauce.
- If the sauce is too thick, add water a tablespoon at a time until it reaches your desired thickness.
